Peruna Blinit – Potato blinis

Blinis..part of Finnish winter food which has its roots deeply in Russia and russian food culture. Blinis are eaten during the cold winter months with fish roe or just with fish.Winter food..Hevy and fatty..Blinis are usually made with buckwheat flour. I found this recipe last Christmas in one of the Finnish magazines. Idea of using potato was quite interesting.

We had guests last weekend and I ended up making Potato blinis as appetizer. This is second time ,when I made potato blinis. We had them during the Christmas holiday, first time with the fish. I saw recipe in one of the Finnish food magazines and gave it a try. They are much lighter, than traditional blinis and very versatile. Try them for breakfast with ham and eggs or with bacon.

Potato blinis

500g potatoes
4 eggs
4 tbs butter
1dl cream
3 tbs flour
1 tbs potato or corn starch
salt,pepper

for frying butter or ghee

  1. Boil the potatoes in salt water till they are soft.When they are done,pour all water away.Lift potatoes into separate bowl, and mash them well. No lumps!!! Important! Allow mashed potatoes to cool down.
  2. Separate egg yolks and whites. Add into egg yolks mashed potatoes,butter,starch,flour,salt and pepper.Mix well.Beat egg whites into foam and fold them carefully into potatoes.
  3. use for frying butter
  4. serve imidiatly

      Hi Anjali, I used cast iron frying pan, which is actually meant for pancakes/creps..Something like this..You can use it for making small omelettes too.
