Zucchini and Chicken Alfredo bake

I love to cook casseroles. They are great when you have family like mine that we hardly have time to eat together during the week. Hubby works long days and me and Kiddo eat always earlier than him. Normal pasta foods go kind of soggy after you have cooked them but casseroles.. Well in my opinion they just get better in flavour when they have time to stand a little.

I usually do not brag about my cooking but oh boy was this good!!!  All the cheese melted together with herbs and garlic. Perfection!

Simple and fast recipe for family dinner. Here you my Baked Zucchini and Chicken Alfredo:

  • 400 g mascarpone cheese
  • 2 dl milk or cream
  • 150 g shredded Parmesan
  • 2-3 garlic gloves or 1/2 teaspoon garlic salt
  •  7 mozzarella balls
  •  chopped or thinly sliced onion
  • 2 zucchinis
  • 400g shredded chicken breast
  • 12 sheets rectangular instant lasagna noodles (or other pasta) four layers of pasta
  • Salt,pepper,oregano and marjoram.

Preheat the oven to 180c.

In  bowl, mix mascarpone,parmesan,cream/milk, garlic and onion. Puree the mixture. I used puree blender, set aside.

Slice your zucchinis into thin slices, length wise. I used mandolin to do this. Set aside.

Layer with 3 noodles, cheese mixture,sliced zucchini and one shredded mozzarella cheese.

Repeat layers.

On the middle layer spread your shredded chicken, top with zucchini,sauce and mozzarella.

Add two more pasta-zucchini-cheese layers. Top with remaining 3 noodles with zucchini and mozzarella cheese. For topping you will need tree mozzarella balls cut into slices. Any left over sauce you can pour on the top of the casserole.

Bake uncovered 50 minutes or until golden brown around edges. Let stand 15 minutes before serving.
