Geesh is hot! Not complaining, not at all. I like summer in Austria. Just figuring out something to eat is problem. Not much appetite. So I foraged the fridge. I had one Honeydew melon there. Melon and air-dried ham is alway good.. Then I got an idea. How about cold soup? What should I say?! It was yummy.
I used some Sonnentor KurkumaLatte spice and air-dried Austrian ham chips from Volcano in the soup. Sonnentor is one of my favourite spice makers in Austria. Volcano ham, well they were a new thing for me.I have head about ham chips but never been able to find them till now. I have to say, great product! if you prefer the soup without ham chips add some melon balls on top and some fresh mint.
You can make your own ham chips simply placing Jamon Serrano or Parma Ham slices in the oven and cooking them. Here is the recipe for the soup:
- 1 ripe honeydew melon, cleaned and cubed
- 4 teaspoons lime juice
- 1 teaspoons Sonnentor turmenic-ginger latte spice (you can replace this with 1 tsp grated fresh ginger and 1/2 tsp fresh grated turmenic.Dry powder is fine too.
-
1 dl light Creme Fraiche
-
handful dried Jamon Serrano chips
In a blender container, combine honeydew, Creme Fraiche, lime juice, and spices. Blend until smooth. Chill several hours.Serve cold.Whisk before serving and garnish each bowl with a few melon balls if desired and add-on top some Jamon Serrano chips .
NOTE: chilling time not included with prep time.
