Pineapple and Cucumber salad

I am back from the holiday that we spent in Finland in our summerhouse. Finland was gracious with us this year. Temperatures between 23-32c all two weeks. Lake and seawater were also soooo warm. I who hates cold water went swimming into the Baltic sea!!

So last night we returned to Austria. 910km and eight hours drive from Travemünde ferry harbor. Needless to say yesterday I was completely useless and tired. Holey Moley, it is scorching hot in Austria! I need some light cooling food.

I remember how we ate in Thailand while we lived there pineapple with chili-salt mixture and it tasted so addictive. Spicy food is actually quite cooling in hot weather. That’s where I got the idea for this salad that I will be serving with a grilled chicken breast. Hope you’ll like it. I will be serving it often as a BBQ side dish.

This is what you will need:

Ingredients

  • 1 fresh pineapple, chopped in cubes
  • 1 cucumber, chopped in cubes
  • 2 limes, zested and juiced
  • 1 glove of a garlic minced finely
  • 150g cilantro, roughly chopped
  • 1-2 chili peppers finely minced
  • salt and pepper (optional)

Instructions

Combine all ingredients and toss lightly to distribute the lime juice and zest evenly. Season with salt and pepper if desired.Serve immediately or keep chilled until ready to serve.

Note: please adjust the chili and cilantro amount to your own taste. We love both, so I am quite generous with them 🙂
