Crockpot Sloppy Joes

This is a little bit different from the Sloppy Joe recipe from the previous one. I usually make a big patch of this and freeze some of it, so when I need a quick meal, I just have to unfreeze it and warm it up. So get your Crockpot out, and let us get cooking! This recipe is also straightforward to make as low-carb version.

This is what you will need:

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 400g Italian Sausage
  • 400g ground beef
  • 1 can  tomato sauce
  • 1 medium onion finely chopped
  • 2 green bell peppers finely chopped
  • 2 tbs apple vinegar
  • 2 tbs yellow mustard
  • 1 tbs Worcestershire sauce
  • 1 tsp cumin
  • 1 tsp sweet paprika powder
  • 1 can Mutti pizza sauce
  • 1 can Mutti cherry tomato
  • 3 tbls beef fond or 2 Knorr Bouillon pur
  • salt and pepper after taste
  • flour and water to thicken

For serving: salad, cheddar cheese and Jalapeno peppers

  1. In a large skillet, fry ground beef and the Italian sausage. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
  2. Add this mixture to your slow cooker. Add the rest of the ingredients and stir well. Cover and cook slowly on low for 7 hours or high for 4 hours.
  3. Mix 200ml flour with 300ml water and about 20 min. Before finishing, mix the flour with warm water and whisk it into the sloppy joes. Turn it to high and let it bubble and thicken. If you want to make this low-carb, leave the flour out and let the sauce boil for one hour without the lid to get thicker.
  4. Place a large spoonful on the bottom of a hamburger bun. Top with cheddar cheese and run quickly under a broiler. Top with the other bun and serve. The low-carb option is to eat this with salad leaves or cauliflower mash.

I served the Sloppy Joes with my special Cheddar and Jalapeno burger buns. They are baked with this recipe: Jalapeno and Cheddar bread. The recipe gives you two big loaves of bread, so I recommend half the recipe for the burger buns.
