I have always leftover food and I hate to throw food away! I had some leftover mash potato from the weekend,that I had to get rid off somehow.I went trough my old recipes and stumbled on this one.This is a very simple and fast recipe to make. It is one of the first recipes,which kids learn to cook at school in home economics. I changed the basic recipe a little.In my recipe, I used some pumpking seeds and graded parmesan cheese to give the simple breads bit more dimension.
These small breads go great ,as a side dish with a soup ,or maybe with wine and cheeses in evening get together and kids can make these by themselves.
This is what you will need:
- 2½ dl mashed potatoes
- salt, if not already in puree
- 2 eggs
- 2½ dl spelt flour
- 2 dl chopped up pumpkin seeds
- 2 tbs butter
- 1 saschet of baking powder (25g)
- Pepper and mace, nutmeg works too instead of mace
- Graded Parmesan Cheese and some Pumpking seeds to top the breads
Mix all the ingrediets together. Make balls about 10cm diameter.Place the dough balls on a baking sheet,flatten and sprinkle with graded parmesan cheese and some pumpking seeds.Bake immediately at 250 degrees for about 15 minutes or untill bottom of the tee bread is brown.
